Raw goat milk and more than 6 months of aging create a cheddar cheese that is rich, nutty and increasingly complex over time. The cheese is sweet, fresh, light, and fruity.
The great taste of Wisconsin based LaClare Creamery's goat milk comes from high quality standards, the goat's special well-balanced diet, and careful handling.
LaClare Family Creamery is a true farmstead operation founded in 1978 with a foundation that is rooted in artistry, family values and hard work. In the late 70’s, eager to return to their rural roots, Larry and Clara Hedrich bought a “hobby farm” in the heart of America’s Dairyland.
Along with their homestead, they inherited two goats, a dozen or so chickens and pair of peacocks. Little did they realize, the goats would soon become the focal point of the lives of their growing family. Hence, the founding of what would become LaClare Farms, appropriately named after founders Larry and Clara.
You can use this complex goat cheddar in place of any traditional cheddar. It is great as an ingredient, but with enough legs to stand alone on any artisan cheese board.
Pair it with ciders and fruit beers, bock, stout, or pale ale. If you're more into wine, drink it with Cabernet Sauvignon, Chardonnay, Pinot Noir
