Asher Blue is a blue cheese from Georgia's Sweetgrass Dairy. Named after the owners' second son, Asher Blue Cheese has a natural rind and creamy, dense, yet crumbly texture. Asher Blue is aged about 60 days, and develops a creamy texture as it matures. Most special of all, Asher Blue is made with grass-fed raw milk, which gives it a depth of flavor and delicious complexity.
This Southern gourmet cheese has flavors of earth, mushroom, and forest floor, with a slight mineral tang, and mild salty finish with notes of cocoa.
Pairs well with dessert wines such as Port, Sauternes or Sherry or a dark ale such as a chocolate stout. Also a strong red wine, like a Zinfandel would be an excellent choice.
We hand-cut and wrap this cheese in wedges of 1 pound and 8 ounces and you can purchase an entire wheel of approx. 6 pounds.
