When you know Point Reyes Original Blue you will experience that Bay Blue more mellow, buttery and dryer with similarities to an English Stilton.
Bay Blue is made from pasteurized and aged aerobically (exposed to air) as a result, Bay Blue progresses fast and is released at 3 months of age. This cheese wheel has a thin, almost invisible rind.
Because the Bay Blue is a little dryer than most blue cheeses it is a little hard to slice it neatly, but the texture can still be considered buttery texture.
A rustic-style blue cheese with a fudgy-like texture and sweet finish, with mushroomy notes; a reflect of the terroir of Marin County in Northern California.
It certainly is a cheese worthy of a spot on your cheese board.
