Beecher's Handmade Cheese's signature cheese, Flagship Cheddar, was first handcrafted in November of 2003. Flagship is a semi-hard cow's milk cheese with a uniquely robust, nutty flavor. It is made with pasteurized milk, and carefully aged for 15 months under the watchful eye of the cheesemakers to develop a complex flavor and dense, slightly crumbly texture.
This Seattle-made cheese is truly scrumptious and versatile. It won't disappear on a cheese board or as an ingredient in cooking. This cheese is memorable in every setting.
At the annual American Cheesemaker Awards in 2007, Flagship was awarded 'Best Semi-Hard Cow's Milk Cheese', and in 2009 this gourmet cheese was awarded a second place in the Aged Cheddar Category at the American Cheese Society Competition.
We cut and wrap this cheese in blocks of approximately 1 pound and 8 ounces and you can also buy a block of this delicious cheese that weighs approx. 9.5-10 pounds.
