Roth Cheese is the maker of the Buttermilk Blue cheese; a raw milk cheese made from Jersey cow's milk and inoculated with Penicillium Roqueforti. This cheese is matured for at least 60 days during which it is rotated frequently to create one of the great American blues.
The pale creamy paste of this gourmet blue shows a lot of blue, and the flavor is piqant and creamy at the same time, tangy but not overwhelmingly assertive.
It is a great cheese to crumble in a green salad, or serve on your cheese board. Buttermilk Blue is a recipient of numerous awards in local and international competitions.
