Dancing Fern Cheese is named for the native ferns that sway and nod at the breezy mouth of a cave in Coppinger Cove where the Sequatchie creamery is located. This gourmet cheese is inspired by the famous raw milk Reblochon cheese of the Savoie in France.
Taste the soft and supple texture and experience a barn-yardy aroma, along with notes of cultured butter, shiitake mushroom, and walnuts. It will strand out on the cheese plate.
Pair this washed rind cheese, that is aged for 60 days with a Pinot Noir, Chenin Blanc, Trappist ale, or a cider. Great accompaniments are marmalades and preserves (in particular grapefruit), dark chocolate, and fresh in-season peaches.
We hand-cut and wrap this gourmet cheese in wedge of 8 ounces. You can also purchase the entire wheel of approx. 1.2 pounds.
