Georgia Gouda is a raw cow's milk cheese that is aged more than 60 days on the Sweet Grass Dairy in Thomasville, Georgia. The cheese has a deep yellow color, is very dense, yet creamy and has a little tart, tangy flavor at first which slowly fades to a smooth finish with some sweetness. An average wheel of Georgia Gouda is approximately 10-12 pounds and it has a natural dusty tan rind.
As you may know, the state of Georgia is known for its peaches, and pecans and those are excellent accompaniment for the Georgia Gouda.
