Gorgonzola is made in a two-day process. Curds from the first day’s milking are swept to the sides of the form, creating a bowl to accept the curds from the second day’s make. Back in the '40s and '50s, it was not uncommon to see Di Bruno founder, Danny Di Bruno, with a giant spoon in hand behind the counter, scooping out homemade spreads onto wax paper for customers in the original Italian Market shop.
