The makers of Cambozola and Cambozola Black Label have created another blue cheese Grand Noir. An elegant blue cheese that is hand-dipped in black wax and then cold-ripened for 8 weeks. You will see the holes in the wax through which the mold was introduced.
Grand Noir cheese has a distinct flavor, sweet and sharp, its texture is lusciously creamy and the cream color of the cheese is a beautiful contrast with the black wax rind. (of course the rind is not edible)
We hand-cut and wrap this cheese in wedges of 1 pound and 8 ounces. You can also purchase an entire wheel of approx. 5.5 pounds.
