Sweet Grass Dairy's Griffin Cheese is an aged, firm, tomme-style cheese made from unpasteurized grass-fed cow's milk. The cheese curds are soaked in local Terminus Porter beer before they are processed into the molding stages of the cheese making.
Griffin cheese, named after the owners third son, has a natural rind, is firm and a little crumbly interior. This really is a nice cheese; warm malty flavors with some resemblance to a cheddar flavor. Definitely a cheese to try.
