Harbison is another award-winning cheese from the Jasper Hill Farm in Greensboro, VT. The cheese gets its name from Anne Harbison, held by many to be the grandmother of Greensboro.
Harbison is a bark-wrapped bloomy-rind cheese that balances a sweet, nutty flavor alongside a complex herbal and woodsy note from the small strip of bark from the spruce trees at Jasper Hill Farm. There may be some blue-green mold on the bark strip. The paste is spoonable but not runny, and represents a flavor and textural contrast to the rind. The variety of flavors represents the quality of the milk and the unique influence of the terroir. This cheese was the result of a wonderful experiment combining Moses Sleeper and Winnimere.
