Caveman Blue cheese is a semi-soft to firm, rich and complex blue. It is a heavenly mix of sweet and fruity with slight vanilla tones and it finishes with nuances of beef, bacon, grass and hay. It has crystals in the paste and a texture like that of butter or a fudge like consistency which makes it perfect for crumbling. It is relatively dry with a natural rind featuring extensive blue mold development.

The Caveman Blue from Rogue Creamery gained this Caveman tagline 'aged in the domain of the caveman' because the creamery built an entirely new aging cave to get the Caveman’s rind just how they wanted it. It was a daring step away from the foiled wrapped blues which led to a delicious success and a testament to how far American cheese has advanced in the last decade. This gourmet cheese is aged for 6-12 months.

The Rogue Creamery’s Caveman Blue likes big reds: Zinfandel, Cabernet and Port. If you prefer to drink beer, try a strong stout or barley wine.

We hand-cut and wrap this gourmet cheese in wedges of 1 pound and 8 ounces.
