Gorgonzola Dolce is made from pasteurized milk from cows living in the Piedmont and Lombardy regions of Italy. Once the milk is in the factory it is tested, then pasteurized and transferred to tanks or vats where it is incubated with a mixture of milk enzymes, penicillium Roqueforti, selected yeasts, and animal rennet - and that is all that goes into a Gorgonzola.
Gorgonzola Dolce is velvety with an unmistakable tanginess. With its tender rind, its pale to white interior and the laced with streaks of blue, giving Gorgonzola Dolce a mildly blue appearance matching its mildly piquant flavor.
