Mascarpone is a traditional Italian soft cheese made from cream. The cream is heated and coagulated with the addition of a small amount of acid (lemon juice, vinegar or citric acid), then cooled and strained through a cheesecloth.
The resulting is a silky smooth and subtly sweet fresh cheese. It's great for spreading and is the basis for the classic Italian desserts like Tiramisu. Also superb in cheesecake recipes, and in savory recipes like risottos and pasta sauces. Try a super simple dessert; melted chocolate drizzled over a bowl of mascarpone. It can also double as a softer whipped cream, dolloped over fruit or any dessert.
