Mt Tam is an organic triple-cream cheese from California's Cowgirl Creamery. Triple-cream cheeses are made by adding extra cream to whole milk, creating a milk base that's much richer than regular cow's milk. The result is a wheel of divinely decadent cheese. This treasure is named after Mount Tamalpais, just north of the Golden Gate Bridge in Marin County, California.

Mt Tam is one of our most popular triple-cream cheeses. It tastes like creme fraiche and cultured butter, with a soft rind reminiscent of white mushrooms. When young, it has a firm tangy core, gooey outer layer, and fluffy rind. When it's more ripe, the inside is thick and soft like buttercream frosting and tastes more salty and grassy. We like it somewhere in the middle - where the center is still firm but the outside has started to soften, forming a creamline just under the rind. Try this cheese to discover your ripeness preference.

Mt Tam has won countless awards for its sustainable sourcing, artisanal cheesemaking methods, and delicious cheese.

Mt. Tam is perfect with bubbles, sweet things like chocolate, jam, or fruit, and salty cured meats. Especially good on a sandwich, or stuffed with garlic and herbs and baked en croute. Endless possibilities await.

Ingredients:organic pasteurized milk, organic pasteurized cream, salt, cultures, and enzymes.
Received this cheese in a basket from Cowgirl Creamery and it quickly became one of my favorites. Smooth and creamy, it is great with pita crackers as a snack. I will keep reordering!

While visiting Stow Lake Boat house, I chose to eat their Sonora Sandwich which is prepared with Mt Tam. I immediately fell in love with this cheese and even though I live in Alabama I will be a regular customer. If you are a sandwich lover, do yourself a favor and make your favorite sour dough bread sandwich with Mt Tam, I had mine with turkey, greens and tomato, it was wonderful!

Delicious. I confused this with a different cheese from Cowgirl Creamery (Red Hawk) when I purchased it, and was very pleasantly surprised. Soft like room temperature brie even when cold from the fridge, and smooth and creamy. Even the rind was delicious.
