The unflavored cheese curds are rich and moist nuggets of fresh (young) cheddar cheese made from fresh pasteurized cow's milk. Culture and rennet are added to acidify and coagulate the milk. This causes milk solids (curd) to separate from the liquid (whey). The curd is cut into smaller pieces and the whey is released as it cooks further. The curds are then drained, pressed, and salted.
