This 5 pounds cheese is clearly following in the footsteps of the Italian Gorgonzola; smooth, yet slightly crumbly and clearly defined blue veins in the cheese. The cheese has tangy (you may call that sharp) and fruity flavors; a wonderful combination with the texture of the cheese.
Try this cheese the way you would a Gorgonzola, so in salads, in cheese sauce, atop a steak, on a cracker. Pair with a nice Merlot or Cabernet.
