In the Kourellas dairy, a distinctive cheese was created, based on a traditional Greek appetizer. It is a cheese made from a blend of cow's, sheep and goat's milk. It is firm and briny when cold, but once it is grilled or fried it turns into something special.
Like the Halloumi, this cheese does not melt while heated, but it is deliciously soft in your mouth. Just sizzle on the grill for a couple of minutes on each side until golden brown.
