Influenced by the cheesemaking traditions of both Europe and Wisconsin, through methods that emphasize traditional grass-based dairying and seasonal raw milk, this cheese is a must-try. It's only made in the summer when cows eat fresh grass, then aged up to two years. The cheese has a firm texture and rich flavor, with notes of grass, cured meat, salt, caramel, and fruit.
