At Spring Brook Farm they make their Reading Raclette cheese from raw Jersey cow's milk. Raw milk is chosen because it adds great complexity to the cheese and many traditional cheeses from Europe such as Beaufort and Comte, are made with raw milk. The cheese is aged for a minimum of 3 months and is formed in wheels of approximately 20 lbs. and is named after the town in which it is made.
This Vermont artisanal raw milk raclette is a unique reflection of both the land in their part of Vermont, as well as the farming and cheese making operations which, combined, make cheese of the highest quality. Reading Raclette is made using traditional methods originating in the French Alps and is considered an alpine style cheeses.
This gourmet cheese is semi-soft, has a washed rind and a unique creamy texture, balanced by nutty, grassy undertones. The cheese is versatile and obviously suited for melting, and yet a wonderful cheese on any cheese plate.
We cut and wrap this cheese to order in 4 sizes: approximately 1 pound, 8 ounces, a 1/4 wheel (approximately 5 pounds).
