Reading Raclette is made with Jersey milk from partner farms in nearby Vermont towns. It is a semi-firm wheel of raw cow's milk cheese that is washed with saltwater brine as is matured for about 3-4 months.
Reading has a creamy, nutty flavor, which is sometimes almost floral or grassy with a pleasing, long-lasting complexity. It is a melt-in-your-mouth cheese, a wonderful melter, and is an ideal cheese to serve when you're craving fondue, grilled cheese, and other melted cheese recipes.
It is an Alpine table cheese that pair well with all kinds of condiments. Try to scrape the cheese atop a plate of fingerling potatoes.
