San Joaquin Gold Cheese is a multi-award winner named after the San Joaquin Valley of Central California. This is an artisan cheese is firm with a natural rind and a sweet, salty, buttery taste. The large 32 lbs. wheel is aged for 12 months.
San Joaquin Gold is unique in both flavor and texture; it is firm with a granual texture, the flavor is warm and nice sweetness and all this is covered with a thin, natural golden hued rind. The California artisanal cheese is made from raw milk from Fiscalini's own herd of 1,400 Holstein cows.
Fiscalini call this cheese their award winning mistake, as it was intended to become a Fontina but has developed into a unique cheese of its own.
It is a wonderful cheese for snacking, but can also be used as a topping for soups or salads, try it in mac and cheese or a grilled cheese. Pair the gourmet cheese with Chianti or Riesling or a IPA or larger.
