good slightly firm cheddar with a slightly more salty finish, and a hint of sweetness due to the honey and salt rub. not too sharp, some flavor complexity, very nice creamy yet firm texture and bite. this is a real treat. something a bit different, stands out, bet it will make a great item on a creative cheese tray. if it costs more to get it, its worth it. a must try cheese, you may add this to your party list, even your stock cheeses. great cheddar variant.
