The St. Peter sandstone caves are located in Faribault, MN and it is in these caves that St. Pete's Select Blue cheese is aged for a minimum of 100 days. It is obvious that this raw cow's milk cheese is named after these caves. The caves are ideal for aging cheese; water can freely move vertically and horizontally, without dripping from the cave ceilings and the inside shape is a Gothic arch, ideal for containing the humidity.
St. Pete's Select Blue Cheese is the company's signature blue cheese. This gourmet cheese is only made in limited quantities. St. Pete's Select was awarded Best of Class at the 2013 US Championship Cheese Contest.
St. Pete's Blue cheese has a creamy mouth feel and has a complex and rather sharp flavor. The cheese is crumbly, 'dirty' white with a lot of blue veining. Try it with fruit and dark chocolate and serve it with a glass of sparkling white wine.
