Toma, meaning cheese made by the farmer himself, is Point Reyes' award winning, all natural, semi-hard table cheese. It is gluten-free and made with microbial (vegetarian) rennet, aged for 90 days and encased in a waxed rind.
This gourmet cheese develops a thin, hard rind, which you should not eat and the inside is smooth, creamy, semi-firm to firm with a straw color and a lovely aroma of grassy fields.
A wonderful cheese as a snack, in grilled cheese sandwiches, in pasta and rice dishes, salads etc. Serve with hop-heavy beers, Pinot Noir or scotch.
