This 10 pounds wheels is made from pasteurized cow's milk, using a vegetarian rennet and aged for 90 day. It is semi-hard and encased in a waxed rind. The texture is creamy, buttery and very approachable.
A perfect snacking cheese, a wonderful cheese for pasta sauces, in risottos, grilled cheese, melted on top of vegetables, a French onion soup etc.
Pair it with sweet flavors like dried or fresh fruit, or something savory, like nuts and greens. Serve with a Scotch, hop-heavy beers or a Pinot Noir.
