This butter is Beurre de Baratte or Baratte butter, (baratte means churn), so this is churned butter. The cultured butter is spun to get the whey out (the watery part) and the butter globules are creamed, making use of a churning machine. The final butter is very creamy.
It is a perfect and simplest addition to any red meats, fish or lobster, pasta, risotto, baked and mashed potatoes, steamed or sauteed vegetables as well as the finish touch to any sauce.
