This Danish cheese combines the rich buttery flavor of creamy Havarti with a slightly crunchy texture. The secret to the cheese’s delicate crystalline texture and subtle crunch is the small white spots you may notice on and in the cheese.
Castello Aged Havarti is aged for 12 months to encourage the formation of these unique and delicious crystals, creating a texture similar to that of well-matured cheeses such as Parmigiano Reggiano, matured cheddar or aged gouda. These crystals are the essence of Aged Havarti’s exciting texture.
While enjoying Aged Havarti, you may notice 2 types of crystals. The surface crystals are clusters of calcium lactate. Within the body of the cheese are crystals of the amino acid Tyrosine, creating a slight crispy crunch. Both are proof of a carefully matured and creatively crafted cheese.
Castello Aged Havarti is great on its own or with thin apple slices. The cheese also pairs well with honey, chutney, or fruit. It is delicious in thin shavings on top of grilled asparagus and green vegetables.
