Vincent is a very tasteful Dutch cow's milk cheese made in Friesland, in the northern part of Holland. It is a Gouda-type cheese that is aged for 26 weeks, resulting in a fruit, sweet tasting matured cheese, that has a lot of character, and is easy to slice, grate and cube.
It is obvious that this gourmet cheese is named after the Dutch painter Vincent van Gogh; with a combination of a self-portrait and his sunflowers painting visible on the rind.
Vincent would be an excellent cheese on a cheeseboard, taking the spot of the hard cheese. Pair the cheese with a Riesling or a Chardonnay or a wheat beer, a stout or a pale ale.
