Traditionally Vlaskaas was only produced during the yearly flax harvest festival, but due to its increasing popularity Beemster Cheese is now making it year round. Vlas is the Dutch word for flax.
Beemster Vlaskaas has a buttery and unique sweet-milk flavor, notes of almond, and a touch of sharpness that adds depth. The texture is softer and creamier than a typical Gouda cheese yet it is still peppered with little protein crystals that add a crunch. The cheese is matured for approx. 5 months.
Try Vlaskaas on a sandwich, in salad, past, cheese sauce or enjoy it with fruits, crackers, bread or just with your favorite red wine or beer.
