This is not the typical Dutch cheese; it is not even a Gouda. It is a very flavorful cheese made from goat's milk. Surprise, not really, especially when you realize that the cheese is made by the same people who make the Reypenaer cheese - the Wijngaard brother.
The cheese is made in a small-scale cheese dairy; they work with traditional drainage pots where the curds and whey are naturally separated - this ensures maximum respect for the beneficial components in the cheese, which are important for later development of the taste during the maturing process. The Wijngaard Chevre Affine is matured for 4 months in special caves and the result is taste worthy.
This Dutch gourmet cheese is creamy, full flavored with a nutty flavor - goaty in a mature way. The rind is hard, the cheese interior is firm, but still supple; easy to slice or grate.
We hand-cut and wrap this cheese in wedges of approximately 1 pound and 8 ounces.
