Brique du Forez Cheese

Brique du Forez cheese has the shape of a brick, and comes from the region of Lyon, Monts du Forez.

This gourmet cheese is a combination of raw goat's milk with some added cow's milk. The rind is a natural white with the interior being soft and creamy with a light earthiness in flavor.

Other names for this cheese are Cabrion and Chevreton.
