Chaumes Cheese is perhaps best distinguished by its soft and springy texture and its tangerine-orange rind that appears after several washings of the exterior. This unique gourmet cheese has a thin orange paper wrapping; is made from pasteurized cow's milk,from the high mountain pastures of the Vosges in the southwest of France.
Beneath the distinctive golden edible rind lies the pale mellow creamy paste a full-bodied flavor that is decidedly complex and has been described as both mellow and meaty with a pleasant hazelnut finish. Slightly more understated than a Munster yet bolder than a Port Salut. Chaumes is a great place to begin your journey into pungent cheeses. It is a very popular cheese among modern French cheese varieties.
A light Chardonnay will draw out the subtle nuttiness of a supple Chaumes for a well-balanced pairing every time. It makes a great table cheese and also great for grilling.
