When you consider the plain Fromager d'Affinois to be luscious, silky, divine, what would be your description of the truffle version?
Fromager d'Affinois has a thin white rind with a soft, smooth and sometimes runny interior that is ivory in color. The aroma can be described as sweet, with a mushroom soup undertone coming from the truffles.
Fromager d'Affinois is often called a Brie, an accessible cheese that pairs well with many wines. This truffle variety goes particularly well with champagne or sparkling wine.
