This French 'Baby Swiss cheese' is made from pasteurized cow's milk and has a delicious sweet and nutty flavor, very similar to an Emmental (that is the Swiss they refer to) or a Jarlsberg (also a cheese that takes after the Swiss Emmental).
The rind has an orange color, and the interior is straw-like interior with large holes (eyes) and has a semi-soft, flexible texture.Madrigal is a lovely cheese that is great on sandwiches, in your fondue, on a pizza, a grilled cheese or as an afternoon snack. Pair this cheese with a Zinfandel, Pinot Noir or a Sauvignon Blanc.
