This French version of 'Baby Swiss' is made from pasteurized cow's milk and has a delicious sweet and nutty flavor. Madrigal is very similar to Switzerland's Emmental cheese, or Norway's Jarlsberg cheese.
The cheese is light yellow with those iconic large holes (also called 'eyes') and has a semi-soft, flexible texture.
Madrigal is a lovely cheese for sandwiches, in fondue, pizza, grilled cheese or as an afternoon snack. Pair this cheese with a Zinfandel, Pinot Noir or a Sauvignon Blanc.
We hand-cut and wrap this cheese is wedges of 1 pound and 8 ounces and you can also purchase a quarter wheel of approx. 7 pounds.
