St. Nectaire is an old traditional French cheese, produced in the Auvergne region of France. It is semi-soft, made from pasteurized cow's milk, from Salers cows that feed on rich, high mountainous pastures.

This French AOC gourmet cheese is made in round flat spheres and when aged, for about 2 months, on rye straw mats the greyish rind may show white, yellow, and reddish dots of mold. Don't let the appearance of the cheese turn you off, inside the natural rind is a creamy, supple, silky textured paste that will melt in your mouth to reveal flavors of nuts, hay, and mushroom. The rind may be sticky and slightly aromatic, as it is a washed rind cheese, but the sweet, grassy aroma is certainly not overwhelming.

St. Nectaire cheese pairs well with fruity red wine.

We hand-cut and wrap this cheese in wedges of 8 ounces and 1 pound and you can purchase an entire wheel of approx. 4 pounds.

Apparently I goofed my last review and it did not print! so here it is: I grew up savoring this divine cheese and missed it when I came to the US and only had it when I visited France. My son followed on his mother's path and thanks to Gourmet-Food we both can now enjoy our favorite without leaving home! Highly recommend this gem of a cheese.... melts in your mouth! Hint: I wrap mine in G-F cheese paper and then put in a zippered plastic bag removing as much air as possible (it stays fresh longer and cuts the powerful perfume!) cut the amount you want to bring to room temp and reseal. Enjoy!

Spent a lot of time in Auvergne as a small girl. fell in love with the St Nectaire, missed it for decades until Gourmet Food magically brought it back for me! The best of the best and then some. Bought 2 full wheels as well as a full wheel of Tome de Savoie.. what a Christmas that was! highly recommend both.

Bought a small package to try. Will buy a wheel to live on. This is wonderful! Mild taste, firm on the edge and softer in the middle. I'm going to listen to my record of Kiri Te Kanawa sing Songs of the Auvergne, have a little wine, and eat this!!

This is a fantastic, mild cheese. My absolute favorite.
