Tomme de Savoie is made in the French Savoie region in France; the area that borders Switzerland and Italy. 'Tomme' means 'round or wheel' and can be applied to many relatively small sized wheels.
Tomme de Savoie is made from raw skimmed cow's milk and is aged for about 3-4 months. The rind of the cheese is rustic; it looks very powdery, grey-brown in color with spots of white-yellow mold. Not a cheese that may appeal to people who just start exploring cheese.
The light yellow past is supple with small holes and the aroma will remind you of underground cellars and the flavor is milky with a citrus tang.
