Castello Blue is an interesting cheese that will touch all your sense. The surface of the cheese has a unique combination of blue-green and reddish molds and these molds give the cheese its distinct aromas with hints of mushrooms and then your taste buds thank you for the delectable rich and buttery notes and the mild spicy accents.
Castello Blue has a Brie-like texture, with the blue in fairly thick, horizontal lines, but the blue is not overpowering. The mild flavor develops steadily as long as it keeps, but it never becomes too strong.
Blue Castello best accompaniment is crusty baguette and thinly sliced pear or you can give it a dazzling presentation by wrapping it in dough, bake and serve en croute, as an appetizer, and pair with a young Beaujolais.
Each wedge is approx. 9 ounces and the half wheel is approx. 1.8 pounds (28 ounces).
