Grayson Cheese hails from a small family farm in Grayson, VA, dedicated to sustainable agricultural; using no pesticides or herbicides. Grayson is an artisanal cheese made using raw milk from the farms personal herd of Jersey cows.
It begins with a washed rind, rust in color and somewhat sticky. The paste is golden and semi-soft. It has a pungent aroma with deep hearty, dare we say, meaty flavor and to make it even more interesting, hints of grass and nuts. This complex cheese is reminiscent of an Italian Taleggio or a French Livarot. This all may be attributed to this cheese being aged longer than their Italian and French counterparts, around 60 days.
Grayson is only produced when the cows are on natural pasture from April through October. There are 80 Jersey cows milked by Helen and Rick Feetes farm and approximately 20% will be used to make this cheese.
This American gourmet cheese was awarded multiple times at the American Cheese Society Competition among which runner-up to Best in Show in the 2008.
Grayson goes well with bread or dried fruits. As it melts beautifully, it could be used with a variety of dishes. The cheese pairs well with a full bodied white, medium red, beer.
We hand-cut and wrap this cheese in wedges of approximately 1 pound and 8 ounces.
