There is a lot you can do, once you have a excellent quality cheddar called Flagship cheese. Beecher's created a smoked version of their signature cheese. Flagship cheese is first aged for a period of 15 months, and then smoked over a mix of apple and cherry wood.

Smoked Flagship is has a robust and  nutty flavor and you will experience the flavors of the wood of the fruit trees, used during the smoking period.

Use this cheddar in a cheese sauce, in fondue on a sandwich and pair this award winning cheese with Syrah or Zinfandel.
