For best results slice thin or cut into lardons (matchsticks) for cooking, try adding this to your favorite macaroni and cheese recipe for an unmatched depth of flavor.
Pairs with Camembert style cheeses and creamy blue cheeses very well. Accompany this pancetta with deep red Zinfandels and medium bodied red wines.
