This artisanal salami collection includes four of our best selling artisanal salamis, made by great salami makers:
Pepper Salami: a spicy Busseto dry Salami.
Sopressata: produced with the highest quality pork cuts, coarsely ground with salt added. Just before stuffing, additional spices are added including the garlic crushed by hand and dissolved overnight in a generous portion of wine.
Wild Boar: a mixture of field harvested Texas wild boar and all natural Duroc pork belly, and seasoned with wine-soaked cloves and juniper berries.
Mild Chorizo: made from coarsely chopped pork and seasoned with paprika, salt and garlic; the mild Spanish paprika gives the chorizo its characteristic flavor.
Artisanal salamis are sprayed with and edible fluffy white mold to crowd out harmful microbes that might want to attach to the salami during the aging process.
