This distinctive cheese was inspired by traditional Greek appetizers made from hot cooked cheese. Like Halloumi, this cheese does not ooze when heated, but instead keeps it shape as it "melts". Just sizzle on the grill or in a skillet for a couple of minutes on each side until golden brown. The result is a hot grilled cheese that's soft with pleasant chewiness, and a mild salty flavor.
This cheese is made from a blend of cow, sheep and goat milk. It is firm and briny when cold, and transforms to toasty and soft when served hot.
