On the beautiful island of Sicily, between July and August, the people of Mieli Thun are harvesting their Forest Honeydew honey. This dark amber honey is wonderful to sweeten milk and coffee, and also mulled wine.
This Italian honey crystallizes slowly; it has a penetrating aroma of spices including black pepper, juniper berries, and cloves. The color is amber with hues of read and brown. Like the Fir Tree Honeydew honey, the Forest Honeydew honey is not a real honey as the substance does not come from the nectar of flowers but from the lymph of certain plants.
Forest Honeydew honey's flavor will remind you of carob, rhubarb, green tomato, liquorice and burnt sugar.
