Coolea Cheese is hand made on the mountain farm of Dick and Sinead Willems in the beautiful mountains of Coolea, in West Cork, Ireland.
Coolea is made from pasteurized full cream cow’s milk. Nothing is taken out and nothing is added. Mild and creamy with a distinct flavor suitable for every occasion. This Irish Gouda-style cheese is a hard, yellow cheese that improves with age. Rich, butterscotch-caramel flavors that, as the cheeses age, develop a breadth and depth of flavor beyond this, which can remind us of endive, dark chocolate or toasted brioche.
Coolea has won several international awards; it was most recently voted Best Modern British cheese and Best Irish cheese at the British cheese awards 2007.
