Made from sheep's milk, this Sardinian cheese is produced in the style of Fiore Sardo. Sardinians have been tending sheep since forever and the Fiore Sardo Cheese is made from the milk of the sheep who live in the wild on the island. It is the variety of the sheep's diet that contributes to a characteristic slightly salty flavor of the cheese with a long finish.
The dark wheel has a firm, somewhat granular texture; it is carefully aged for 8 months. The consistency of the cheese is crumbly while being creamy. A mild pecorino with regard to sharpness, but a cheese with a surprisingly rich flavor. The rind is covered with a very thin plastic and is thus inedible. The shape of the wheel is also typical of this pecorino, a 'dorso di mulo', which means 'rounded sides'.
