Mitica Sardo is a rustic and traditional pecorino from the Italian island of Sardinia. Rugged and rural, this island is perfect for sheep, who climb over the craggy rocks and through dense brush, foraging. The Sardinians have been keeping sheep since forever, and making impressive pecorinos for just as long. This cheese is made in the style of Fiore Sardo, which is a lightly smoked sheep's milk cheese. It's extremely complex. Sheep's milk is high in protein and fat, making this cheese rich, nutty and satisfying. The light smoking each wheel gets contrasts beautifully with the richness of the cheese. Typical to pecorinos, the flavor is salty and tangy with a long finish. The dark wheel has a firm, somewhat granular texture; it is carefully aged for 8 months. A mild pecorino with regard to sharpness, but a cheese with a surprisingly rich flavor. The rind is covered with a very thin plastic and is thus inedible. The shape of the wheel is also typical of this pecorino, a 'dorso di mulo', which means 'rounded sides'. This cheese is a superstar in Italian dishes, and won't fade away. Use for grating, snacking, or serving. Ideal for shaving over salad or pasta, in lasagna, on pizza and more.
