Piave Vecchio, Old Piave or Matured Piave is named after the Paive River, that flows through the Piave valley in the Dolomite Moutain region of Italy. It is another Italian DOP cheese, made in large wheels of approximately 15 pounds and the name of the cheese brandished into the rind. This really is a nice cheese and has texture similarities with a Parmigiano-Reggiano.
