This cheese is drunken from red wine, Cabernet Sauvignon wine in particular and it goes without saying that the cheese gives off fruity notes of wild blackberry and cherry. Ubriaco means drunken in Italian.
The Cabernet and Merlot grapes must (includes the skins of the grapes) was used to preserve the cheese before modern methods were invented, but this tradition is still carried on.
The purple colored rind is stunning and the fragrance of the cheese inviting to showcase on a cheese platter.
Olives, crackers, salami are perfect accompaniments of this cheese and of course a glass of Cabernet would be excellent, and sparkling wine is a good combination as well.
