An Italian blue cheese made from goat's milk, or should we say an Italian green cheese as Verde Capra means Green Goat. This cheese has a similar texture as the famous Gorgonzola Dolce, but the flavor and looks are quite different.
Verde Capra is dense, creamy and mildly inoculated with green mold, a unique goat's milk blue cheese that is made by the cheesemaker Ambrogio Arnoldi in the Lombardy region of Italy, the same region that is known for the production of Taleggio.
This large rindless cheese of approximately 25 pounds is made with pasteurized goat's milk and matured for about 90 days. It is wrapped in foil to avoid drying out.
The flavor of the cheese is tangy, creamy with a definite blue flavor, that is not overwhelming; it also has a slight aroma.
Serve the cheese on an Italian cheese platter and you will have something unique to offer.
We hand-cut and wrap this cheese in wedges of 1 pound and 8 ounces.
Ingredients:pasteurized goat's milk, rennet, salt, enzymes and penicillium roqueforti.
