Rare Bird Preserves was founded by Elizabeth Madden, who fell in love with preserving fruit being a student at the French Pastry School. She has a passion for creating beautiful, delicious preserves using French classic, simple methods and the results can amazing.

The ingredients are locally sourced whenever possible and the fruit is cut, juiced, and zested by hand. The products are crafted in the traditional way in copper pots with natural ingredients. Traditional method, non-traditional flavors by blending seasonal fruits with herbs, chocolates and other distinctive ingredients produces deliciously unique spreads.

Strawberries and rhubarb, what a wonderful combination; it may be a classic flavor one, but it is so soft, so delicate that you can spoon it right out of the jar. No bitterness of the rhubarb, yet not overly sweet as so many other preserves.

Let's follow the suggestion of Elizabeth Madden, founder of Rare Bird Preserves and try this artisan preserve in a sponge cake, or a vinaigrette. Other uses may be in a muffin, part of a BBQ sauce, or stir in your yogurt, on top of ice cream.

Rare Bird Preserves are small batch preserves, made with in season fruit, when the picking is plenty and at the right time. No preservatives are used.
