To make Raspberry Vincotto Vinegar a traditional vincotto is used as a base and a certain amount of raspberries are blended in the velvety concoction.
Vincotto is not a balsamic vinegar, however, there are some similarities. Vincotto is a dark, sweet dense grape must produced in the Apulia region of Southeast Italy. Grape must, made from Negroamaro and Black Malvasia grapes, is slowly cooked for hours, hence the name vincotto (cooked wine), until it is reduced until 1/5 of its volume and then it is placed in oak barrels for 4 years.
Try the Raspberry Vincotto Vinegar in salad dressings, on blue cheese and meat and poultry.
